Specialty Fungal Alpha Amylase enzyme for use in saccharification and fermentation
SZM XT-20 is a purified native fungal α-amylase produced from Aspergillus oryzae that breaks down amylose and amylopectin of starch to shorter chain dextrins and maltose. Its application decreases mash viscosity thereby increasing the efficiency of hydrolysis by glucoamylase.

One unit (u) is the amount of enzyme which hydrolyzes soluble starch to liberate 10 milligrams of glucose per 30 minutes under the conditions of the assay. A detailed assay method is available upon request.
SZM XT-20 provides the following benefits to ethanol producers.
- Lower total residual sugars at drop
- Increased ethanol production and oil when applicable
- Viscosity reduction of Beer/Stillage/Syrup
- Lower syrup solids/volume
- Lower residual DP4+ material due to increased conversion
- Lower residual starch in DDGS
- Lower glycerol production due to a more proportional glucose/maltose profile reducing osmotic stress
SZM XT-20 is used in addition to traditional glucoamylase enzymes to convert the most difficult starch fractions. Greater starch conversion equates to greater ethanol output. SZM XT-20 has a broad operating range for enhanced process flexibility and performs well within the temperature and pH ranges typical in whole ground corn batch fermentations.
In high gravity fermentations, performance can be further enhanced by the addition of SZM AP-1 acid protease.
SZM XT-20 should be dosed at 0.0041 - 0.0082% weight enzyme / weight as is corn. The actual dose required will depend upon the conditions of your fermentation: time, initial pH and the level of solids.

SZM XT-20 is available in 1,125 kg totes.
SZM XT-20 will meet the declared activity upon arrival at your plant. SZM XT-20 can be safely stored in sealed containers. Enzymes should be stored below 770F (250C) and sheltered from direct sunlight for maximum stability.
The enzymatic activity of SZM XT-20 remains at ≥ 90% for six months when stored at 25oC. The recommended dosage may need to be increased if stored for longer than six months.
Safety and Enzyme Handling
SZM XT-20 contains proteins obtained from large-scale cultures of the mold Aspergillus oryzae. Proteins may cause an allergic-type reaction in sensitized individuals that could require immediate medical attention. Prolonged direct contact may cause minor irritation to skin, eyes, or mucus membranes. For detailed handling information, please refer to the appropriate Material Safety Data Sheet.
